FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to non-waste processing of fish skin with scales for production of vegetable-and-fish mixtures. Method for processing fish skin with scales involves using salted fish skin with scales as a raw material, milling the raw materials, adding a vegetal component to the raw materials in the form of cereal grains in a weight ratio of 1:4-11 respectively. Mixture is dried with air at temperature not exceeding 60 °C to moisture weight ratio of not more than 12%. Dried mixture is milled into particles sized no more than 600 mcm.
EFFECT: proposed fish skin with scales processing method ensures the food additive production technology simplification with the raw materials nutritive value preservation and storage life increase, applied as an alternative to cereal flour.
