FIELD: food industry.
SUBSTANCE: production of breaded meat, fish, dairy and vegetable semi-finished products. Breading mixture for deboning semi-finished food products intended for subsequent heat treatment includes crushed grains and a collagen-containing additive. Wheat or a mixture of wheat and rice, taken in an equal mass ratio, was used as grain. The fibrous component of fish scales was used as a collagen-containing additive. The breading mixture is obtained as a result of joint high-speed grinding of the mixture components and subsequent separation to a particle size of not more than 2.5 mm. The components of the mixture are used in the following ratio, wt.%: wheat or wheat with rice, taken in equal mass ratio - 80, fibrous component of fish scales - 20.
EFFECT: improving the adhesive properties of the breading mixture and increasing the yield of finished products.
