FIELD: biotechnology.

SUBSTANCE: invention relates to biotechnology and can be used in the production of fodder protein products for productive animals and is characterized by fermentation of a nutrient medium based on concentrated milk whey permeate, starch or starch-containing raw materials, bioelements in the form of inorganic compounds; pasteurisation is combined with enzymatic hydrolysis of the starch-containing raw materials. Components introduced into the fermenter contain concentrated milk whey permeate with a dry substances content of 54–55%, or a reconditioned permeate from a dry permeate to this dry substances content, as additional nutrients starch or starch-containing raw material in compliance with ratio between permeate and solution of starch or crushed starch-containing raw material from 1:1 to 1:2 on dry substances, bioelement nitrogen in form of carbamide and bioelements in form of inorganic compounds, obtaining wort, which is heated up to 58–70 °C, then adding enzyme preparations of class of alpha-amylases and beta-amylases successively, wherein the second enzyme is after 30 minutes holding with the first enzyme, and held for total of 60 minutes, with periodic stirring, or one enzyme preparation simultaneously containing an enzyme of the class of alpha-amylases and beta-amylases is added, and held for 60 minutes, so that pasteurization is combined with enzymatic hydrolysis of the starch-containing raw materials. Then wort is cooled to temperature (33 ± 1) °C, introduction of Lactobacillus culture and preparation “БК-Углич-ПРО”, or containing Propionibacterium freudenreichii, fermentation to reduce pH 4.0–4.6, cooling to (30 ± 1) °C and fermentation of fodder yeast culture for 36–48 hours with aeration. Further, method includes filtering obtained protein-carbohydrate or protein-yeast biomass on separator, or further use thereof in liquid form.

EFFECT: invention simplifies the method of producing a protein-mineral functional fodder product from a milk whey permeate and a starch hydrolysate or a starch-containing raw material compared to existing methods, as well as accessibility of method for conditions of feed and biotechnological shops located in regions close to place of consumption of fodder yeast protein.
