FIELD: biotechnology. SUBSTANCE: method involves extraction of enzyme from pancreas tissue of slaughter animals, separation of extract in the field of self-discharging centrifuge centrifugal force for condensation of suspension (pore size of filtering element is 250-300 microns), purification of trypsin-containing liquid and separation of enzyme at the stage of salting out using centrifuge (pore size is 3-5 microns) and spraying drying of trypsin at the temperature of heat-carrier at inlet and outlet 130-140 C and 60-75 C, respectively. EFFECT: enhanced yield and specific activity of enzyme. 1 tbl
