SUBSTANCE: method of malt production involves barley soaking, its germination at simultaneous treatment with tris-(2-hydroxyethyl)-ammonium-4-chlorophenylsulfonylacetate at concentration 50-60 mg/t grain at the second day of germination following by treatment with potassium bromate spraying at the third day at concentration 200 mg/kg grain.
