FIELD: food industry.
SUBSTANCE: invention relates to a method of producing buckwheat malt. Method comprises preparation of buckwheat grains, malting, languor green malt under film with gradual increase of temperature to 45 °C for 24 hours, stepped drying for 5-6 hours at 50±3 °C, and then for 5-6 hours at a temperature of 60±3 °C.
EFFECT: method provides better solubility of buckwheat malt by increasing extractivity, content of amine nitrogen, Kolbach index and viscosity reduction.
