FIELD: brewing industry.
SUBSTANCE: disclosed is a method of producing malt, including washing grain, disinfection, soaking grain to moisture content of (42–45)%, then germination, characterized by that the grain is pre-treated in a magnetoplasma apparatus for 1–2 minutes at a magnetic field induction of (0.015–0.02) T, in 4–5 days grain without pre-treatment is soaked with water at temperature of (12–18) °C for 2–3 hours and subjected to germination for 3–4 days with periodic irrigation and turning until sprouts are formed, then dried to moisture content of (3–4)% with air at temperatures not exceeding 85 °C.
EFFECT: invention makes it possible to accelerate the malting process without changing the quality indices of the produced malt.
