FIELD: food industry. SUBSTANCE: ground groats are sealed with boiled cold water and kefir at ratio 20: 1. Then lactic-acid fermentation is carried out within 12-16 h at 28-32 C. The process is followed by filtration, washing by cold water. Thus prepared filtrate is settled within 16-18 h, upper layer is poured out. Thus prepared concentrate is stored in refrigerator and is used for oatmeal milk liquor production. EFFECT: improves efficiency of the method.
