SUBSTANCE: invention relates to production of food concentrates of grain-based beverages, namely to liquid concentrate of oat jelly. Disclosed is a method of producing oat concentrate. Oat flakes "Hercules" are diluted with boiled cold water with an additive and maintained in a closed vessel, filtered and washed with water, the obtained filtrate is settled, then the upper layer is drained. Oat flakes "Hercules" are preliminarily mixed with milled unrefined oat grains at weight ratio of components: oat flakes 13–18%, unrefined oat grains 1.5–2.5%, additive 3.0–4.5%, water—up to 100%, maintenance in a closed vessel is carried out for 26–34 hours, the filtrate is settled in for 12–16 hours. Additive is kefir or oat starter.
EFFECT: invention increases biological value of liquid oat concentrate.
