FIELD: fish industry. SUBSTANCE: method involves filleting, fillet mincing, farce washing with anionic polysaccharide solution, removal of solution, mixing of the latter with food grade acid, and separation of sediment. Farce is decanted prior to washing, tissue juice is mixed with food grade acid to pH 3.9-4.1, and sediment-free tissue is added to the washing solution. Decanted farce is washed with aqueous solution of polysaccharide (0.05-0.20% ) at a 1: 5 - 1: 7 farce/solution ratio. Food grade acid is added to the washing solution for bringing pH to 3.6-3.8.
