FIELD: regeneration of protein from animal muscles.
SUBSTANCE: method involves mixing specific kind of tissue with aqueous solution of acid with pH value below 3.5 for producing protein-enriched solution; separating protein-enriched aqueous solution from solid substances and lipids including membrane lipids. Protein-enriched aqueous solution may be treated for settling of protein with following regeneration thereof.
EFFECT: increased efficiency in extracting of practically whole amount of protein from raw food material used.
