FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method involves fish washing with water, beheading, evisceration, carcass washing with water, carcass filleting and mincing. The mince is twice washed with water, stirred at a rotation rate of 450 rpm at the first stage and at 300 rpm - at the second stage, each stage duration equal to 5 minutes; the ratio of mince to water is 1:2-1:4. The weight fraction of moisture in the mince is 76% - 82%, the water retaining capacity - no less than 70%.
EFFECT: invention ensures production of washed mince of freshwater fishes.
