FIELD: gelatin and meat industry. SUBSTANCE: essence of cake demineralization method resided in that cake was treated with phosphoric acid solution having concentration of 10 to 25 % in terms of phosphoric anhydride by two steps. In the first step, phosphoric acid was introduced in amount exceeding normal stoichiometric rating prescribed for amount of calcium contained in cake which was treated at residual pressure of 0.15 to 0.8 atm and temperature of 15 to 35 C during 0.5 to 3.0 h. In the second step, phosphoric acid was introduced in amount sufficient for maintaining concentration of free acid in admixture at level of 10 to 25 % , in terms of phosphoric anhydride, by adding reusable phosphoric acid. Product was treated at atmospheric pressure and temperature equal to that involved in the first step during 120 to 168 h. EFFECT: higher efficiency.
