FIELD: food industry.
SUBSTANCE: invention relates to the food and biotechnology industries. Method for biocatalytic processing of raw bone materials includes degreasing, grinding and treating the raw bone materials with hydrochloric acid; wherein the raw bone materials are treated with 1 M hydrochloric acid jointly with the microbial enzyme pepsin with an activity of at least 300,000 U/g at an enzyme concentration of 50 U per gram of raw bone materials and a hydrochloric acid : raw bone materials ratio of 9:1 wt./vol. while constantly stirring for 6 h.
EFFECT: proposed invention shortens the duration of process operations of demineralisation, liming and de-ashing of raw bone materials from 7 days to 6 hours, and unites the presented operations due to the comprehensive approach.
