FIELD: food industry. SUBSTANCE: stock is crushed to particle size 1 mm, suspended in water, pH of suspension is adjusted to 2.0-5.0 and temperature to 60-130 C. Extraction of gelatin is then carried out for 1 sec to 1 hr. Remaining suspension is cooled to 100-60 C and pH of suspension or its gelatin-containing liquid part is adjusted to 5.5- 6.0, respectively before or after separation of suspension into gelatin-containing liquid part and solid residue.
