FIELD: food industry. SUBSTANCE: method involves heating fructose-containing solution to 30 C and its dehydration. The latter process takes place by ultrasound spraying in vacuum at pressure not more 6.0 kPa, frequency being 18-80 kHz. Apparatus for proposed method realization has heating device, vacuum chamber, device for feeding fructose solution into it, technological pipes and source of ultrasound oscillations having shaft concentrator of oscillations. Above mentioned device for feeding solution is manufactured as ring chamber having outlet nozzle which is displaced coaxial with slit about shaft of concentrator. Heating device is carbon-carbon heater disposed in wall of ring chamber. EFFECT: improves efficiency of the method. 1 dwg
