FIELD: food-processing industry. SUBSTANCE: apparatus has vacuumizer with concentrate discharge branch pipe, annular solution supplying chamber communicated with vacuumizer, and rod-type longitudinal vibration concentrator mounted in flush with sleeve and connected with supersonic source. Apparatus is further provided with high-voltage DC source. Rod-type concentrator and branch pipe for discharging concentrate from vacuumizer are electrically insulated. Current source is connected with concentrator and concentrate discharge branch pipe so that current direction coincides with direction of flow of solution in vacuumizer.
