FIELD: food processing industry. SUBSTANCE: plant has cooled heat-insulated reservoirs 1 which are connected with evaporation chamber 12 mounted above them forming the cooling agent circulating loop. Circulating loop is provided with delivery pump 18 and cooling agent spraying device 19 and 20 located inside chamber 12. Food preservation brine is used as cooling agent. Plant is provided with vacuum creating unit which includes the following devices which are interconnected forming independent cooling agent circulating loop: cylindrical reservoir 21 with jet pump 26, flow agitator 31, cooling agent cooler 25 whose outlet is connected with active nozzle of jet pump; evaporation chamber 12 is brought in communication with active nozzle by means of pipe line. Section of the cooling agent circulating loop before the pump is connected to independent circulating loop at the section after flow agitator. EFFECT: enhanced efficiency. 1 dwg
