FIELD: food industry. SUBSTANCE: the present innovation deals with technology to manufacture salads. The method includes preparation of fresh vegetable ingredients of salad and boiled or marinated vegetable- protein components, dressing emulsion is prepared by applying strains of bifido- and lactobacteria taken at 1:1 ratio at total titer in ready-to-use salad to be not less than 106-108 CFU/ml. Mixing of formula components is carried out in ratios providing the keeping of salad's organoleptic properties. Ready-to-use salad mass is kept for 30-60 min at +24-30 C, not less followed by its packing and cooling up to storage temperature. The method provides higher antimicrobial activity of conserving salad's components. EFFECT: increased useful properties of ready-to-use product. 10 cl, 1 tbl
