FIELD: confectionery production. SUBSTANCE: beet pulp is shredded and hydrolyzed at the presence of HCl under heating at hydromodulus of 2-6. After centrifugation, the solid phase is subjected to multi-staged extraction, with the extracted product from early step being used for the following one. At the final stage the extraction of the product is carried out in water. The centrifugation of the solid phase, after extracting, is carried out to obtain weight ratios between completely dry solid and liquid phases of 1: 3-5. Liquid layers are combined, and pectin product is precipitated, which is then treated with ethyl alcohol at temperature of from -5 to -10 C.
