FIELD: dairy industry. SUBSTANCE: curd whey is purified from casein dust and fat, subjected for the heat denaturation at 80-95 C and separated for concentrate and permeate. Permeate is demineralized by ion-exchange resins at 20 C passing in sequence at least twice through the cationic exchange resin at strong acid form for 15 min at the volume ratio cationite:permeate = 1: 40 and anionite in hydrocarbonate form for 10 min at the volume ratio anionite: permeate = 1:10. Then eluates were mixed with concentrate and proteins were stabilized simultaneously by citrate addition followed by condensation, homogenization and drying.
