FIELD: food industry. SUBSTANCE: whey is purified against casein dust and fat, pasteurized and affected by ultrafiltration. The latter process is carried out till content of dry material in concentrate is 18-22 %. Permeate is demineralized with the help of ion-exchange resins, the process is carried out twice at 20 C. Permeate is consequently passed through cationite in highly acid form, volume ratio cationite and permeate being 1:40 and through anionite in bicarbonate form, volume ratio anionite and permeate being 1:10. Said processes are carried out within 15 and 10 min respectively. Thus treated permeate is mixed concentrate, concentrated and dried. EFFECT: improves efficiency of method. 2 cl, 2 tbl
