FIELD: food-processing industry, chemical industry and other branches of industry. SUBSTANCE: apparatus has rotor of cylindrical or cylindrical-taper form, device for introducing the mixture into rotor and device for discharging the light and heavy liquid fractions from rotor. Interior of rotor is divided by at least one partition into zones which are brought in communication in way of motion of mixture for transfer of light and heavy fractions from zone to zone and change of position of interface of fractions in subsequent zone as compared with previous one. Device for discharging one of liquid fractions from rotor is mounted in zone in front of partition. Rotor is provided with at least one additional device for discharging the same fraction from zone located behind the partition. EFFECT: enhanced efficiency. 3 dwg
