FIELD: food-processing industry. SUBSTANCE: method involves preparing emulsion by mixing butter, drawn butter, condensed milk, melange, vanilla powder, salt, soda, baker's salt; introducing small portions of viscous-consistency sugar syrup mixed with softened apple and honey extract pulp; adding portion of high-grade wheat flour; forming obtained mass by means of rotor and baking on belt of conveyor. Components used for preparing biscuit are provided in the ratio, % by weight: sugar powder - 20.3-20.9%, butter - 11.3-11.8% , drawn butter - 11.3-11.8%, condensed milk - 5.7-6.1%, melange - 8.1-8.2; vanilla powder - 0.46-0.47%, salt - 0.17-0.18%, soda - 0.34-0.35%, baker's salt - 0.15-0.125%, sugar syrup - 1.1-1.16%, high-grade wheat flour the balance. Obtained product has pleasant crumbly structure, golden appearance, thick honey taste.
