SUBSTANCE: granular caviar is produced by extruding granulation of protein-oil mixture and gelling agent containing agaroid, sodium citrate or acetate and alcohol in a liquid medium. Novelty consists in that the solution of gelling agent is additionally treated with sodium chloride and ferrous chloride.
