FIELD: control of production processes. SUBSTANCE: method involves determining light reflection coefficient by the use of light flux with a wavelength of 600-700 nm. Meat quality assessing instrument comprises a needle with handle, a light guide mounted in the needle, a source of light in the handle, support and measuring photodiodes, and a recording unit connected by a cable. Measurements are taken directly on carcasses of cattle after slaughtering and cooling on the long dorsi muscle. EFFECT: improved functional and operating characteristics. 2 cl, 3 dwg
