FIELD: dairy industry. SUBSTANCE: fat-free milk is mixed with buttermilk (acidity below 20 T) in a proportion of 4:1, respectively, the mixture is pasteurized and condensed to a mass fraction of dry matter equal to 35 ± 2% at a temperature of 55-65 C. The mixture is then inoculated with metered portions of aqueous solution of polysaccharide before or after condensation and the condensed mixture with polysaccharide is dried. EFFECT: higher efficiency.
