FIELD: milk industry. SUBSTANCE: method involves pasteurizing fat-free milk, cooling, introducing aqueous solution of polysaccharide in two stages: at the first stage aqueous solution is introduced in an amount of 0.7% of initial amount of fat-free milk, at the second stage obtained mixture is introduced in portions into remaining portion of fat-free milk before or after concentration. When mixture is introduced before concentration stage, the following concentration process is conducted at temperature of 55 ± 5°C till weight part of dry substance reaches 30 ± 5%. In case mixture is introduced into concentrated milk, it is preliminarily concentrated to achieve weight part of dry substance of 35 ± 5% at 55 ± 5°C.
