FIELD: milk processing industry. SUBSTANCE: mixture of butter milk and skimmed milk is pasteurized, ratio of said ingredients being 3:1. The process is followed by cooling, by adding rennet, calcium chloride and ferment and by fermentation. Mentioned above ferment contains acidophile bacillus, thermophile streptococcus and bifidum bacteria at ratio 1:5:5, quantity of said ferment being 0.5 mass Thus prepared product is cut, cooled, compressed and normalized.
