The process is followed by cooling, by adding rennet, calcium chloride and ferment and by fermentation. Mentioned above ferment contains acidophile bacillus, thermophile streptococcus and bifidum bacteria at ratio 1:5:5, quantity of said ferment being 0.5 mass Thus prepared product is cut, cooled, compressed and normalized. Then additives are added into desired product. EFFECT: improves efficiency of the method. 1 tbl
