FIELD: fat and butter production. SUBSTANCE: method involves ester interchange of dehydrated fat by ethyl alcohol. The process is carried out at atmospheric pressure at 78-80 C in the presence of sulfuric acid. Thus prepared product is neutralized by alkali solution, neutral esters being separated and affected by fractional distillation to prepare one high boiling fraction and two low boiling fractions. Said high boiling fraction contains at least 45 of docosehexaenic acid and eicosapentaenic acid. Content of said acids in mentioned above low boiling fractions is at least 1 and 20 respectively. EFFECT: improves efficiency of the method.
