FIELD: food industry.
SUBSTANCE: method allows to obtain a product with high content of the ethyl ester concentrate of polyunsaturated higher fatty acids with a total content of eicosapentaenoic acid and docosahexaenoic acid at least 75%, with a content of liposoluble vitamins A - 300 IU/1 g, D - 30 IU/1 g, and E - 100 mg/1 g, stable during prolonged storage. For obtaining the vitaminized oncentrate of ethyl esters of polyunsaturated higher fatty acids from fish oil, transesterification by means of 99% ethyl alcohol in the presence of an alkaline catalyst, separating the layers with the ethyl esters discharge, fractioning the latter in the ethanol medium in the presence of urea with the crystallization of urea complexes, and isolating the desired product are performed. Fish oil is taken with the humidity of up to 0.3%, the acid number of 0.7 mg KOH/g and a total content of eicosapentaenoic acid and docosahexaenoic acid of at least 14%. The transesterification is carried out at the uniform temperature of the components. The ethyl esters of fatty acids are fractionated in the refrigerant circuit, filtered, then the resulting semifinished product is purified by the method of adsorption chromatography by a sorbent mixture consisting of activated carbon, foamed vermiculite, bleaching earth and silica. Then fat-soluble vitamins A, D, E, and an antioxidant represented by the essential oil of citrus and/or Umbelliferae plants, are introduced.
EFFECT: invention allows to simplify and cheapen the process, to exclude the presence of trace amount of toxic solvents in the finished product, to increase the product yield with the high content of ethyl esters of polyunsaturated higher fatty acids.
