FIELD: storage of farm produce. SUBSTANCE: method involves drying root crops by continuous blowing through a system of active ventilation of a bactericidal mixture of air with sulfur anhydride at the flow rate of 1-6 m/s and anhydride concentration of 0,5-1,5 g/m3 for 2-3 days at a temperature of 18-22 C ad a relative humidity of 65-80% then cooling and holding at 1-6 C and a relative humidity of 85-98% with cyclic blowing of the mass at the same rate with a mixture of air with sulfur anhydride in a concentration of 0,8-2,0 mg/m3 with an average daily operation of system of 2 to 12 h. The mixture can be produced by blowing with air a container with suppressing conservant based on sodium or potassium methabisulfate. EFFECT: higher efficiency. 3 cl, 1 dwg, 1 tbl
