FIELD: storage of farm produce. SUBSTANCE: method involves drying root crops by continuous blowing through a system of active ventilation of a bactericidal mixture of air with sulfur anhydride at the flow rate of 1-6 m/s and anhydride concentration of 0,5-1,5 g/m³ for 2-3 days at a temperature of 18-22 C ad a relative humidity of 65-80% then cooling and holding at 1-6 C and a relative humidity of 85-98% with cyclic blowing of the mass at the same rate with a mixture of air with sulfur anhydride in a concentration of 0,8-2,0 mg/m³ with an average daily operation of system of 2 to 12 h.
