FIELD: food industry. SUBSTANCE: fryer comprises a frying chamber with a mixer, and product loading and unloading devices. The mixer is provided with bucket members secured on the ends of hubs connected with a shaft. Installed on hubs above the bucket members at an angle to the rotation plane are additional plates 12. The mixer is sectional with its sections arranged so that section hubs are installed along the generatrices of the helical surfaces extending along the shaft. The number of helical surfaces is equal to the number of hubs in the section and the bucket members have negative angles of attack to the direction of rotation. Frying chamber is made in the form of a horizontal cylindrical drum and has a horizontal slit in the lower part for tangential air supply under the layer of the product being fried. The upper part of the frying chamber accommodates a separator in the form of a trapezoidal prism whose smaller side adjoins the frying chamber so that the other side of the prism mates tangentially with the entire length of the frying chamber. The end of one hub of each section may be provided with a plate or a plate-type brush set at an angle to the rotating plane, or the hubs may have free ends and be arranged along the generatrix of one and the same helical surface.
