FIELD: food production. SUBSTANCE: method involves cultivation on the nutrient medium containing flour milling waste, for example, wheat or rye bran, and additional source of carbon nutrition: the sources of nitrogen, phosphorus, mineral salts and trace elements using yeast strain followed by fermentation process under aeration condition and drying the end product. In the 1-st variant beet-sugar molasses at the ratio beet-sugar molasses flour milling waste 1:(0.5-18) is used as an additional source of carbon nutrition; in the 2-d variant liquid n-paraffins at the ratio n-paraffins flour milling waste 1(3-10) were used. Before feeding for fermentation flour milling waste as 9-11 wt.-% aqueous suspension is subjected for enzymatic lysis at 60-65 C for 1-1.5 h, at stirring using hydrolytic enzymes at concentration of each 0.05-0.07 wt.-% EFFECT: improved method of preparing. 2 cl, 4 tbl
