FIELD: dairy industry; condensation of milk and milk products by evaporation in multilpe-casing evaporators. SUBSTANCE: method involves condensation of product in vacuum. After discharge of end product into the II-stage calorizator, water is supplied in the amount sufficient for washing off the residual end product from the heating surface. Water with remaining product is heated to a condensing temperature then sprayed with circulation from an injector installed in the I-stage vapor separator. EFFECT: higher efficiency. 1 dwg
