FIELD: food industry. SUBSTANCE: emulsion is prepared by mixing invert syrup, margarine, blend, salt, sodium hydrocarbonate, ammonium hydrocarbonate salt, raspberry aromatic principle and a mixture consisting of the defatted milk, buttermilk and skimmed milk taken at the ratio 1:2:2.5 which is brought about to dry matter content 70-72% Granulated sugar is added to the prepared emulsion by portions. After preparing uniformly churned emulsion wheat flour of high quality is added to it by small portions. Then prepared mass is formed by rotor method and caked on transporter tape. Components were taken at the following ratio, wt.-% mixture of defatted milk, buttermilk and skimmed milk 1.27-1.272; granulated sugar 20.78-20.8; invert syrup 2.25-2.26; margarine 19.07-19.08; blend 1.07-1.08; salt 0.4-0.402; sodium hydrocarbonate 0.2-0.208; ammonium hydrocarbonate salt 0.17-0.18; raspberry aromatic principle 0.492-0.494, and wheat flour of high quality the rest up to 100% EFFECT: improved quality, prolonged storage.
