FIELD: dairy industry. SUBSTANCE: method for production of lactulose syrup includes heating and filtration of lactose-containing solution, alkalization of solution up to pH 10.0-12.0 conducted in three-tract electrodialyzer at current density of 20-400 A/sq.m by dissociation of water for formation of hydroxyl ions in chambers with lactose-containing solution. After alkalization lactose is subjected to isomerization of lactose into lactulose. In so doing, solution is additionally alkalized to maintain pH at preset level. Then, solution is acidified, demineralized, filtered, thickened, and lactose remaining in solution after isomerization is crystallized with subsequent separation of its crystals from lactulose syrup.
