FIELD: food-processing industry. SUBSTANCE: apparatus has at least one diaphragm-type electrochemical cell made cylindrical and mounted in vertical position. Cell has cylindrical anode and rod-like cathode, which are positioned in axially aligned relation. Ultrafiltration diaphragm is made from zirconia-base ceramic and is positioned so that volume ratio of anodic and cathodic chambers is 0.7-0.8. Milk and electrolyte inlet and outlet devices are formed as unions positioned in lower and upper parts of chambers, respectively, and connected with water and milk supply and discharge pipes. Apparatus is further provided with salt solution vessel, metering unit mounted in milk supply pipe and water supply pipe before metering unit, and pipeline for connecting water supply pipe between metering device and electrolyzer and milk supply pipe between flow rate meter and electrolyzer. Connecting pipeline is provided with valve. Current rectifier is made in the form of full-wave single-phase semiconductor bridge with current limiters having paper condenser. Supplying and discharge pipes have current-collectors formed as earthed titanium pipe cuts with length at least equal to three inner diameters of these pipe cuts and spaced from electrolyzer by distance D determined by formula D=100d, where d is hose inner diameter. EFFECT: simplified process, reduced power consumption, increased efficiency and improved quality of processed milk, provision for obtaining of disinfectant solution, which may be widely used in milk production processes. 3 cl, 2 dwg
