FIELD: food industry. SUBSTANCE: tea extract is separated into light colored and dark colored phases till concentration of solid component in it is 6-45 mass % (12-30 mass % being preferred). The process is carried out by concentrating extract, its cooling to temperatures lower than 5 C and by isolation of separated phases. Light colored phase is used for preparing transparent tea being soluble in cold water, tea having reduced caffeine content, and isotonic tea. Dark colored tea may be used for preparing tea being soluble in hot water, for preparing dye, antioxidant agent or additive which flavored tea. EFFECT: improves efficiency of method. 6 cl, 4 tbl
