FIELD: canning industry. SUBSTANCE: prepared fruits were mixed with sugar solution and subjected for cavitation grinding and sterilization under condition of condensation in steam mixture. The the ready product is separated from the solid inedible raw parts under aseptic conditions. Method is used for canned dessert production. EFFECT: improved method of canned food production.
