FIELD: food industry, liquer and alcohol production. SUBSTANCE: process of concentration of solution containing oligosaccharides provides for its evaporation to produce concentrate. Before evaporation solution is injected with ammonia till it saturates solution. Evaporation is conducted in presence of ammonia to keep solution pH above 7.0. Prepared concentrate is treated with carbon dioxide to obtain starting pH of solution followed by its heating to temperature not below 60 C. Process is carried out at plant which includes collector of concentrated solution, evaporator, mixers for solution of ammoni and solution of carbon dioxide installed in front and after evaporator, collectors for liquid ammonia and liquid carbon dioxide connected with pipe-lines to proper mixers and collector of concentrate fitted with heater.
