FIELD: medicine, food industry. SUBSTANCE: invention relates to technology of isolation of sweet substances from licorice root. The removal of acetone from the separated extract in its concentrating and/or removal of ethanol residue from the precipitate is carried out by extraction with liquid carbon dioxide under pressure above atmospheric one. EFFECT: decreased consumption of acetone and ethanol, increased safety of the process.
