FIELD: perfume industry, essential oils. SUBSTANCE: anethole isolation from fennel essential oil. Process conditions: rectification under vacuum, obtaining anethole fraction at required end product content, its heating to point not above boiling point of mixture with water or with aqueous substance solution that decreases dissolving and emulsification of anethole such as sodium chloride followed by keeping to the complete removal of decomposition products formed at rectification and to constant odor disappearance, separation of aqueous phase and drying. EFFECT: improved method of anethole isolation.
