FIELD: food industry. SUBSTANCE: raw is milled preliminary, mixed with water at mixture hydromodulus 1:(3-8) and subjected for cavitational effect at 35-40 C for 15-65 min at cavitation number 0.15-0.35. Then sap is separated and subjected for the successive ultrafiltration on semifiber filters AP-2 at pore size (1.2-1.8) x 10-6 M and AP-6 at pore size (0.2-0.4) x 10-6 M. Obtained concentrate at dry matter content 20-22% is purified om ion-exchange columns up to inulin content in it 20-21%. EFFECT: improved method of inulin preparing. 10 cl, 1 dwg
