FIELD: food industry. SUBSTANCE: method involves sugar beet cheeping and its pressing in working press chamber at graduate pressure increase up to 1.0-1.3 MPa for 1-2 min and juice removing. Then vacuum is made in chamber to 50-100 Mpa and mass kept for 1-2 min. Then chamber is filled with water at amount 30-40% of juice pressed off and mass is kept for 1-2 min. This cycle is repeated 2-4 times up to attainment of the required sugar content in the pressed off chip. EFFECT: improved method of beet juice preparing. 1 dwg
