FIELD: food industry. SUBSTANCE: method involves heat treatment of industrial stocks of fish processing industry which comprise highly hydrolyzed lipids, the process takes place at 90-95 C. Then thus prepared product is mixed and is allowed to stand. The process is followed by separation of fat and aqueous phases till concentrated fat product is prepared. Content of free fat acids in desired product is not less 100 mg KOH/g, degree of its unsaturation is 65-67 %, water content being not more 15 %.
