FIELD: fish industry, in particular, production of chitin from shell-containing crayfish wastes.
SUBSTANCE: method involves providing demineralization of preliminarily prepared raw material and subjecting to enzyme deproteinization and alkaline cleaning; before demineralization process, decolorizing wet shell-containing wastes with alcohol; adding water to decolorized shell-containing material in the ratio of 1:8-1:10; mixing while adding portions of concentrated hydrochloric acid to provide for demineralization, with concentration being brought to 2-4% for 30-40 min; Demineralization process is performed for 1-1.5 hours at temperature of 20-25 C. Enzyme deproteinization process is combined with final demineralization process and provided with the use of acid enzyme-substrate of sheatfish stomach contents.
EFFECT: provision for producing of chitin from shell-containing crayfish wastes with low content of mineral and protein substance contaminants without usage of expensive enzyme preparations.
