SUBSTANCE: invention relates to the fishing industry and can be used at fish processing plants for the manufacture of fish collagen from the swim bladders of freshwater fish. The method for obtaining collagen from the swim bladders of freshwater fish includes soaking, swelling, which is carried out with acidified water, in a ratio of 1:1 to raw materials with a dosage of acetic acid of 1% by weight of raw materials, washing, cooking collagen-containing fish waste in acidic solutions, filtration of hot collagen solutions, cooling them for gelling, cutting jelly into plates, drying at ambient temperature. Salty swim bladders of freshwater fish are used as collagen-containing raw materials. Cooking is carried out in aqueous solutions acidified with acetic acid in two stages: at the first stage at a temperature of 58-62°C for 75 minutes, at a hydromodule of 1:5.0, pH 5.2, at the second stage at a temperature of 64-67°C for 75 minutes, at a hydromodule of 1:2.0, pH 5.2. Cooling of the collagen solution is carried out at a temperature of 6-7°C for 10-12 hours. The collagen solution is dried from two brews separately: the first fraction at a temperature of 25°C, the second at a temperature of 27°C. The resulting collagen is degreased once with ethyl alcohol in a ratio of 1: 1-1:2 at a temperature no higher than + 15°C for 15-30 minutes.

EFFECT: invention is aimed at improving the quality indicators of collagen of the natural structure from the swim bladders of freshwater fish.
