FIELD: food industry. SUBSTANCE: beet is washed, frozen, aged, and then successively defrosted part-by-part, each part being fit for one scalding operation. The latter is followed by disintegrating and cooling scalded beet. Disintegrated mass is shaped into press-packets 40-80 mm high, which are pressed and produced juice is preserved with addition of ascorbic and sorbic acids, stabilized, clarified, and concentrated.
