FIELD: food and chemical industry. SUBSTANCE: husk is sieved, washed out with water and extracted with 1-5 weight % solutions of sodium carbonate or hydrocarbonate or mixture of carbonate with calcium or ammonium hydroxide at 60-100 C and hydromodulus 1.7-5.0. Then solution is concentrated by ultrafiltration followed by evaporation of concentrate. Water- and fat-soluble brown dye is obtained by this method. EFFECT: improved method of dye preparing. 1 tbl
